Most store bought almond milk contains a controversial ingredient, Carrageenan. According to the report by the Cornucopia Institute, Carrageenan may be to blame for increased gastrointestinal problems. What is more disturbing, this controversial ingredient is in organic food.
Here is a good recipe that I got from Natalia Rose’s Fresh Energy Cookbook.
Soak 1 cup of almonds overnight. Drain in the morning.
Add 4 cups of water and blend in a blender. Get it as fine as you can.
Strain through a cheesecloth.
It is delicious!!
My husband and I drink store bought almond milk. I’ve felt funny about this for awhile because I know it’s a processed food, but it’s convenient. I’ve also heard that carrageenan is not the greatest thing for you. I didn’t realize it was so easy to make almond milk. Thanks for the recipe, I’m going to try it. Celeste 🙂
I recently started making almond milk from scratch. It tastes so much better than the store-bought varieties! I usually throw in a few dates to sweeten it a bit.

Yes, I usually use the same recipe as you plus 2-3 dates. Sometimes, I increase the ratio of almonds to make it creamier. Nice to “meet” you too, Lauren!

I added a date to the blender per Eileen’s suggestion. It was really good but I forgot to take the pit out! Give it a try, it’s a really simple recipe.
