Vegan Spring Rolls

Butter lettuce
Scallion (julienned)
Jalapenos or Serrano peppers seeded and julienned
Cucumber (julienned)
Shredded Carrots
Mung or Bean Sprouts
Rice paper

This is so easy and delicious!
Chop all ingredients and lay them out assembly line style.
Dampen a dish towel on which you can lay the rice paper and prepare the roll.
Prepare rice paper according to directions, stuff and roll.

I either use organic peanut sauce for dipping or this recipe if I have more time

  1. I love rice paper spring rolls – they’re such a great way to serve raw veggies if you want something other than a salad. Adding fresh herbs is wonderful touch 🙂
