Vegan Broccoli and “Cheese” and Vegan Mac ‘n “Cheese”

These two dishes are staples at my house. They are essentially the same recipe but the mac and cheese calls for a bit more of the first four ingredients. I use a quinoa pasta in the mac and cheese recipe but you can use any pasta. Nutritional yeast can be found in the bulk section of Whole Foods and many grocery stores.

Broccoli and Cheese:

Cheese Sauce

1 cup nutritional yeast

2 tsp. any kind of flour you like

1 cup water

1/3 cup organic ketchup

2 TBS. of salsa

½ tsp salt

1 tsp paprika

1 tsp turmeric

1 tsp garlic powder

Dash of pepper

In a small saucepan combine the first three ingredients and whisk until blended. Add the remaining ingredients and stir. Heat on medium heat for a few minutes until it begins to bubble. Turn off heat.

Steam broccoli (I use the frozen bagged organic broccoli for convenience and cost effectiveness). Drain, pat dry with paper towels to remove excess water. Blend cheese sauce in and serve.

 

mac n cheese

Mac n’ Cheese

Cheese Sauce

1 and 1/4 cup nutritional yeast

2 tsp. any flour you like

1 cup water

1/3 cup organic ketchup

3 TBS. of salsa

½ tsp salt

1 tsp tumeric

1 tsp paprika

1 tsp garlic powder

Dash of pepper

In a small saucepan combine the first three ingredients and whisk until blended. Add the remaining ingredients and stir. Heat on medium heat for a few minutes until it begins to bubble. Turn off heat.

Prepare 8 ounces of your favorite pasta according to directions. In the last three minutes of boiling, throw in a bag of frozen organic broccoli, continue to cook. Drain thoroughly, toss with cheese sauce. Place in a Pyrex or glass pan, dust with bread crumbs and bake at 350 for 20 minutes.

  1. Oh good! If it’s too watery, add a little white flour (last resort). If it needs more flavor add more salsa and ketchup. It is surprisingly delicious.
