I hope you are doing well! As I said in my very last post, I have been working on my passion project, teaching people how to reverse disease by eating a whole-food, plant-based diet. I reversed my own heart disease by following this way of eating. I have dropped my cholesterol over 110 points, changed the shape of my blood platelets from hard and small to big and round; a sign of reversal and I’ve dropped 20 pounds, all without medication. If you haven’t done so already, please follow me at https://www.wellelephant.com/ a pop-up subscription will come up if you stay on the page for about ten seconds.
I have been doing behind the scenes work for the past months; re-doing my website (almost finished!), creating an online course curriculum (getting there) as well as an in person course (finished!). I am going to send you a special offer to my In Person class tomorrow. Be on the lookout because my friends who have subscribed to Well Elephant and/or My Non-Toxic Life are going to be in for a huge gift tomorrow. I appreciate you and I am thinking of you still and always.
It is important to be informed when it comes to choosing a sunscreen. Melanoma, the deadliest form of skin cancer is on the rise. There is no conclusive evidence about why this is occurring, but there seems to be a link to UVA exposure over the years; especially getting sunburns as a child.
There are two types of rays, UVA and UVB. UVA or just UV rays are more damaging and penetrate deeper into the skin. They are responsible for accelerated aging, may suppress the immune system and may cause skin cancer. Continue reading “How to Select the Best Sunscreen”
There is no shortage of information out there telling you that you should be eating olive oil and coconut oil. I used to believe that. I also used to be on the verge of having full blown heart disease. Anyone who knew me would have said that I was a clean eater. That’s because we are truly misinformed about what clean eating is.
If you have been following this blog from the beginning you will notice an evolution. I used to eat occasional meat, eggs and dairy. I gave that up. I now eat only a plant-based diet. On top of that, I have also given up oil and avocados. I have dropped my cholesterol 100 points without using any cholesterol lowering medicine. I VERY RARELY have nuts or seeds, they are my big splurge.
Read Dr. Furhman’s article that tells you emphatically why oil is not a health food.
Olive oil is not a healthy fat; it is not a whole food—it is a fattening, low-nutrient, processed food, consisting of 100 percent fat.

This is a pretty tasty alternative to traditional spinach dip that is loaded with fat from mayonnaise and sour cream. It also avoids additives such as MSG from Knorr vegetable soup mix that is usually mixed in to spinach dip for flavor. Continue reading “World’s Best Vegan Spinach Dip”

The Reuben sandwich, you either love it or hate it. I loved it in my former meat-eating life. Here is my vegan take on it.
Two to four slices of toasted bread, this will make enough for two sandwiches (I use Ezekiel bread)
whole grain mustard
half a container of sliced mushrooms (4 oz)
1/3 of a zucchini, sliced and cut into quarters
a few slices of onion Continue reading “Vegan Reuben Sandwich”
