Ingredients:

1 cup warm water

2 & ¼ tsp. yeast

½ c. organic vegan sugar

½ cup of organic unsweetened applesauce

1 tsp. salt

3 tsp. Ener-G egg replacer and 4 TBS. of water to mix (the equivalent of two eggs)

2 c. organic bread flour

2c. organic white whole wheat flour

Salt and sugar mixture – ½ tsp. of each for topping

Vegan Pumpkin Apple Muffins

I adapted this from the minimalist baker’s recipe.http://minimalistbaker.com/vegan-pumpkin-apple-muffins/  My recipe is oil muffinfree and I do not cook the apples because I’m lazy and it tastes great without the extra effort (I tried it both ways and I promise it’s still wonderful). These muffins are super moist and very healthy except for the sugar, but hey, you’ve got to have a little pleasure.

Ingredients:

1 cup flour (I used white whole wheat)

½ cup oat flour

1/3 cup old fashioned oats + extra for topping

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 tsp cinnamon + more for apples

Ten Easy Tips for Better Health

People always ask me for ways they can be healthier. I think I scare them a little when I start rattling things off. There really are simple ways to avoid the things that lead to disease. Here is a quick list from easiest to more challenging.

  1. Buy organic produce, meat and packaged foods – this is the easiest and surest way to avoid the onslaught of toxins, pesticides and genetically modified organisms (GMOs) that are in our food system.
  2. Give up “diet” everything… soda, Splenda, aspartame, low-fat, fat-free, etc. I promise you, if it has to have a claim on the package, you DON’T want to put it in your body. If eating “diet” foods worked so well, we’d be an emaciated nation, not the sickest and fattest. You are being lied to. It keeps you coming back for more diet products and it makes you gain weight.
  3. Get rid of your old Tupperware and plastic containers – switch them out for glass or at the very least, BPA free plastic. Also stop buying canned goods. They contain BPA in the lining (with the exception of Eden brand foods and a few others). You’ll notice more items are coming in cardboard (aseptic) packaging.   4. Stop using your microwave – I know, I know, but really, you will get used to heating things up on your stove top and in your oven. I swear, in the last year, I have not used my microwave for more than heating up my coffee for 15 seconds on the very rare occasion. My mom had a dear friend who died from cancer when she was about 55 years old. I don’t remember that sweet woman ever cooking anything other than a microwave dinner.   8. Limit processed foods – If it comes in a bag or a box, make sure it’s organic and has less than five ingredients. Remember, for the most part, this is not food, it’s a food like substance. It is special, like your weird uncle Harold, and should be avoided if possible.
  9. Cut back on dairy, sugar, white and whole wheat flours – dairy is inflaming (and delicious, I know, but it’s not healthy). Try to cut waaaaay back on sugar. If you have to sweeten your coffee, tea, or bake with something use 100% Organic Pure Cane Sugar; not sugar in the raw, not turbinado sugar, make sure it is 100% organic. Organic agave nectar is good too, coconut sugar is good, honey is good, but not the junk that comes in a bear shaped plastic container. It has to be pure, raw or local honey. I have found many recipes can be sweetened with organic dates.
  10. Eat more vegetarian and vegan meals – there are so many delicious vegan and vegetarian recipes on WordPress and online in general. Devote several meals a week to vegetarian meals. The Fight to Know What is in Our Food

 

 

dylieThis is a pivotal moment in the fight to know what is in our food. The integrity of organic food and labeling issues are very much in flux right now.

As it stands about 90% of all corn, soy, cotton, canola, sugar beets grown in the U.S. contain genetically modified organisms (GMOs) or are considered genetically engineered (GE). About 50% of zucchini, yellow squash and Hawaiian papaya are GE.

What does that mean? According to the Institute of Responsible Technology, “A GMO (genetically modified organism) is the result of a laboratory process where genes from the DNA of one species are extracted and artificially forced into the genes of an unrelated plant or animal. The foreign genes may come from bacteria, viruses, insects, animals or even humans. Because this involves the transfer of genes, GMOs are also known as “transgenic” organisms.”

Why does this matter to you? 85- 90% of all processed foods contain one or more GMO ingredient. GMOs were introduced to the market in the mid 90’s without any long-term testing. That’s right. You’ve been the guinea pig for about twenty years.

Perhaps over the last twenty years you’ve noticed a rise in some disease states such as cancer (specifically kidney, breast, colon and anal), diabetes, allergies, gastro-intestinal disorders, infertility, autism, auto-immune disease, ADHD etc. I’m not saying the two are linked, but I would say that there needs to be long-term studies on the effects of GMOs. Non-toxic Cookware

I have covered the topic of toxic cookware briefly in the past, but I wanted to update the information. First of all, if you still are using Teflon coated cookware, toss it in cookwarethe trash! Teflon is the brand name for a chemical coating known as PFOA. What is the problem with this coating? This is from About.com/cookware:

“The resulting products contain no or only trace amounts of PFOA, and the Environmental Protection Agency does not have enough information about the product to suggest that using the products could cause a health risk or concern.

However, because this chemical is used in the manufacturing process, it has been found in low levels in the environment and even in the bloodstream of a sample of the U.S. population. It has been found to affect the development of laboratory animals, as well as other adverse effects on their health.”

That is good enough for me. Run. Run away from the Teflon.

Are So-Called Nutrition Drinks Making us Sicker?

Is it possible that nutrition substitute drinks for diabetics actually contribute to type 2 diabetes?glucerna-shakes-product-image

A relative of mine has type 2 diabetes. His doctor told him to drink Glucerna shakes because it will help to balance his blood sugar and give him nutrients.

But as much as he drinks these shakes, he never seems to get better; only worse. I explained to his wife that he would do better to get nutrients from actual green vegetables like the ones I juice daily. She told me in horror that he just needs to do what his doctor told him.

From where did we get the idea that these drinks are a panacea? I believe from commercials that target trusting care givers, from drug reps that tell doctors that these shakes are actually nourishing and because they are handed out routinely in hospitals. The drug companies do a surprising and alarming amount of doctor education. As far as I know, there are no sales reps for the vegetable industry.

Super Food Snow Day Smoothie

It’s a snow day here in Austin (technically, an icy cold mess, but hey, no school).  My 13 year old son made this delicious, double-decker concoction. He also took this photo.  Yep, there’s not much to do when your steep driveway is iced over.  Of course, there is the obvious, go down said driveway on a knee-board all morning, crash many times, then make a smoothie.  smoothie

I realized this smoothie had 3 of the 8 most nutrient dense foods (hemp seed  – in this case hemp milk, chia seeds and berries) listed by Drew Canole; a juicing and health expert.
